Over the past 30 years and through many different jobs, Tom has found his place as one of the top people in the liquor industry. He most proudly worked hand in hand with Sasha Petraske as part of the opening bar staff at The John Dory Oyster Bar and at Milk and Honey NYC. He was also honored to be the Head Bartender of The Beagle (where sherry in cocktails was at the forefront), Bar 54 at the Hyatt Times Square and finally joining forces with Megan Dorman for 3 years at Dear Irving. He was featured in Martha Stewart Wedding, as the “ask the expert" for cocktail design, where three of his original cocktails were featured. Tom is not only published in numerous cocktail books but has also consulted on cocktail programs around the country, and continues to judge competitions.

In Tom's quest for fresh and delicious, he created a handcrafted quinine tonic – Tomr’s Tonic – that has taken off like wild fire. He started a new beverage category (tonic syrups) and a company, Tom’s Handcrafted, and is now in numerous watering holes and retail outlets throughout the United States, with distribution worldwide including Europe, Hong Kong, Australia, and Canada. Tomr’s Tonic was also named one of the top 10 new products in the world for Tales of the Cocktail
and ranked number 2 in the top 5 new food products in Food and Wine Magazine. Tomr’s Tonic has been featured in The Wall Street Journal, The Village Voice, Time Out New York, The Chicago Tribune, Bon Appetite, Saveur, Imbibe, Difford's Guide, Eater, Star Chefs, and myriad other online blogs.
