Los pagos de Viña

Pagos are extensions of land on which an indeterminate number of vineyards are located which, due to their location and micro-climatic conditions, their geological composition or their orography, share similar conditions and therefore produce grapes with different characteristics. 

The Marco de Jerez has an enormous geological, orographic and mesoclimatic diversity, all of which affect the vineyards. This diversity has given rise to a kind of empirical knowledge: we have traditionally spoken of the olorosos from Carrascal, the manzanillas from Miraflores... Of the "chalk" (i.e. the chalky profile) of the wines from Macharnudo or the finesse of those from Balbaína. In addition, many of Jerez's vineyards have a historical character. We find written references to their qualities and peculiarities as far back as the 18th century, which probably makes them the oldest pagos -as we know them today- in our country and among the oldest in Europe. 

In 2015, the Control Board completed the official map of the Denomination of Origin's pagos, on the basis of which the precise limits have been established that allow producers to certify the pago of origin of the grapes they use. From then on, as long as the necessary traceability is guaranteed and the use of at least 85% of the grapes from these pagos is proven, wineries can use these historic names on their wine labels. 

The Control Board is currently working on the characterisation of each of these pagos from a geological, orographic, mesoclimatic and productive point of view, without forgetting the many historical aspects associated with magical names such as Añina, Balbaína, Macharnudo or Martín Miguel.
