EVOL was designed as an aperitif to accompany the first course of a meal. The overall low alcohol content, as well as the bitter notes and lovely sherry, make it a perfect appetite stimulant and a wonderful way to ease into your meal.
Since this cocktail is intended with the first course, I love pairing it with coriander dusted seared Ahi tuna with corn custard and jalapeno jam. The fatty richness of the tuna and the corn custard pair well with Oloroso Sherry, and the jalapeno jam accentuates the spice in the sherry. The bitter notes from Luxardo Bitter and the Rhubarb bitters help digest the dish and stimulate your appetite for something more.
Combine all ingredients in the mixing glass, fill the glass with ice, and then stir smoothly for 20-25 seconds to ensure proper dilution.
Serve in Irish Coffee Glass.
The ideal temperature at which to serve an Oloroso is at between 12 and 14ºC.
This is the most suitable wine to accompany red meat and game. It combines perfectly with meat stews and casseroles; especially gelatinous meat such as bull's tail or cheeks. The perfect match for wild mushrooms and well cured cheeses.
Serve it between 12° and 14° C in a white wine glass.
