Delight in Crunchy Vietnamese Summer Rolls, Harmoniously Paired with Chilled Fino Wine!
As you savor these delectable Vietnamese summer rolls, elevate your dining experience by pairing them with a chilled Fino wine. The crisp, dry nature of Fino beautifully complements the vibrant flavors and textures of the rolls, enhancing every bite with its refreshing notes. Dip them into the tangy dressing or satay-like sauce for an unforgettable meat-free meal.
Gather the following ingredients:
In a small bowl, whisk together all the dressing ingredients until well combined. Set aside.
In another small bowl, lightly whisk together all the peanut dipping sauce ingredients, except for the chopped peanuts, with 100ml of room-temperature water until smooth and combined.
Fill a medium bowl with hot water and have a large plate or chopping board ready. Dip each dried summer roll wrapper into the water until it softens, then lay them flat on the plate or board.
Arrange all the filling ingredients on a plate, drizzle the dressing over them, and mix gently.
Place ¼ of the filling ingredients onto each wrapper, ensuring that the vegetables and noodles face the same direction. Roll the left side over the vegetables, then fold the top and bottom over the ends. Continue rolling the wrapper tightly from left to right until it forms a compact roll.
Cut each roll in half diagonally and serve with the peanut dipping sauce. Sprinkle the chopped peanuts and dried chilli flakes over the rolls for added flavor and a touch of heat.
It is an ideal aperitif wine and goes well with all types of tapa, especially olives, nuts and Iberian cured ham.
