A marriage of a Bamboo and Old Pal cocktail, the drink serves as a complex apertif with a bitter depth that allows it to appeal to a guest who prefers a stiffer beverage. The Antiguo Amigo is a perfect food pairing cocktail because its bitter elements stimulate the palate while the bright acidity continues to cleanse the palate in between bites. It also retains enough complexity that it can be enjoyed on its own.
First prepare an orange pigtail with a channel knife, and allow pigtail to rest around mixing spoon while you build the drink to ensure the garnish retains its shape. In a mixing glass, add half and ounce each of Priorat Natur Sweet Vermut, Campari and Ron Zacapa 23 year rum. Add one and a half ounces of Barbadillo Principe Amontillado Sherry, ideally kept chilled in the refrigerator. Add Kold Draft cubes, stir briefly to incorporate ingredients, but air on the side of understirring. Strain into an exceptional, chilled coupe glass. Perch your pigtail garnish, and express an orange disk over the top of the drink.
Amontillado should be served at a temperature of between 12 and 14º C.
It is an ideal wine to accompany soups and consommés, white meat, blue fish (tuna), wild mushrooms and semi-cured cheeses.
It combines perfectly with vegetables such as asparagus and artichokes.
Serve it between 12° and 14° C in a white wine glass.
