Cooking time: 1 hour
Cut the meat into cubes and chop the garlic and coriander, place into a stainless steel bowl. Add the lemon juice, olive oil, spices, salt and pepper. Leave to marinate for at least 30 minutes in the refrigerator, the longer you can leave them the better.
Pinch the meat onto wooden skewers and grill on the barbeque until golden brown.

It may accompany nuts, cured cheeses and, at the table, the more concentrated consommés, stews and gelatinous meats (bull's tail, cheeks...)
Serve it between 12° and 14° C in a white wine glass.
It combines the subtlety of an Amontillado with the roundness of an Oloroso.
Its composition allows it to be stored in open bottles for months.
