Do you have a philosophy when it comes to pairing Sherry with food, or for creating food to pair with Sherry?

The philosophy is the same as we do every day. It is to find the perfect match between food and drinks, that allows our customers to have the perfect symphony between the glass and the plate

What is your favorite non-traditional Sherry pairing?

Jerusalem Artichoke, coffee and cocoa nebs 

Why did you want to participate in Copa Jerez?

It is so much more than just a competition, is to learn more about meeting incredible people, learn more about the products, the participants and the jury.

If you could serve your pairings from Copa Jerez anywhere in the world other than your restaurant

a.     Where would it be?

       At a soup kitchen

b.     Who would you like to serve them to?

      Because everyone who’s going through hard times deserve a little bit of happiness and light in the darkness

c.     What would the soundtrack be?  

     Absolute silence, people just enjoying their meal
