It is the result of a three years joint venture with the organic vine grower José Cabral to study the possibility of producing a Premium Manzanilla with his organic Palomino grapes from the famous Burujena Pago. This process has been controlled and certified by the Sherry Regulagory Council and the Organic Farming Council of Andalucia (Consejo Andaluz de Agricultura Ecológica, CAAE).
Entusiastico is a classic Premium Manzanilla aged in very old “La Goya” manzanilla barrels, using the traditional Criaderas and Solera system, but using organic grapes and organic wine alcohol to be fortified. In addition it will be marketed “En Rama” thus letting consumers enjoy it as close as possible to how the wine is in the barrel. Entusiastico is a unique wine, not only because of its organic production but also because it is coming from a jerez superior single vineyard.
Another innovative aspect of Entusiastico is its packaging. It has been bottled in the same manner as an elegant white wine in a transparent bottle, with an organic cork closure and a very distinctive purple label showing a painting by the Russian painter Igor Andriev.
The first release of this organic manzanilla will be only 1200 bottles, but the wine is attracting enough interest that the solera has already been expanded to increase its production capacity in the coming years. The wine was available for trade tasting at the Big Fortified Tasting held in London on the 22nd April.
Delgado Zuleta was founded in 1744, making it the oldest family owned winery in the Sherry region and the fourth oldest company in Spain. In 1914 it took the name of a famous flamenco dancer, La Goya, for its main manzanilla. It has had the privilege of being suppliers to the Spanish Royal family on many occasions.
